"Why doesn't my Stardew spouse remember our wedding anniversary?"
Well, now they can!
UPDATE: This mod just got a huge update! Multiple spouses now supported, along with all existing spouses and custom NPCs.
v2. 0: Adds Content Patcher support for any mod that would like to add custom anniversary dialogue for their NPC.
What This Mod Does:
This is a dialogue mod that creates special marriage dialogue for each spouse on the day of their wedding anniversary.
NPC spouses will now:

[]Remind the player of an upcoming anniversary one week in advance[/]
[]Wish the player a happy anniversary and give an anniversary gift[/]
[]If the spouse is happy with the player (10+ hearts) on the day of the wedding anniversary, you will see unique randomized dialogue for each vanilla spouse and a custom randomized anniversary gift. Each spouse has a different set of gifts to give![/]
[]However, if the spouse is unhappy with the player (fewer than 10 hearts), the dialogue and the anniversary gift will both be... less nice.[/]

[]While this mod has proven very robust during testing, there is a slight possibility that messing around with console commands like world_setyear (etc) will change a spouse's wedding date in the save file. This will obviously cause the anniversary text to not happen on the correct day, possibly skipping year 1 entirely. You have been warned.[/]

Compatibility With Other Mods:
This mod should work with any marriageable NPC. There are default dialogue and gifts lists for non-vanilla spouses, so you should get an anniversary day greeting from custom NPCs with no issues.
