Open the console using ~ key, and type Showracemenu to open the character editor, where you can change the visual aspects of your character. Rather than hitting \'Done\' when finished, Save to a new savegame, quit the game entirely, and load this new savegame when you load the game up next. This is the best method that I know of to change your looks without resetting your stats and level.
