In vanilla Skyrim you are forced in first person view until you are unbound, this is to hide the fact that Bethesda did not have or could not implement animations for the time you have to run to the keep with your hands bound, this fact can be seen when using mods like 3rd Person View During Alduin Attack on Helgen and Improved camera SE that allow you to see the scene in third person view and see your body when in first person view respectively, with Dynamic animation replacer that issue can be fixed.
This animation mod has animations for all the actions you could possibly do until your hands are freed, it covers the idles, walking, running, sprinting, jumping, sneaking and the stagger animations to keep you fully immersed in the scene.
