He's seen what you've done. He's seen you trap his villagers. He's seen the "trading halls" and your methods of getting a discount. All naturally spawned and villager spawned iron golems will attack you when you enter their sight range: within around 15 blocks.

Iron golems created by the player (using iron blocks and a pumpkin) will not.

To spawn in a "player created" in creative use the command:\ /summon iron_golem ~ ~ ~ {PlayerCreated:1b}\ or\ /give @p iron_golem_spawn_egg 1

Minecraft may ask you if you want use Experimental Settings, just press "I know what I'm doing."
