TL;DR (please read in Sir David Attenborough's voice; dramatic pauses mandatory):
Observe the wasteland at dawn. The old world is gone. Once passive, edible scenery now shudders with intent. A coyote freezes. A bear advances. The coyote does not gamble. It flees.
Natural Selection gives each creature purpose, memory, and fear. Predators assess threats before engaging, using a quantitative model of their own strength versus yours. They fear fire – a torch in your hand makes you seem far more dangerous to many of them. Loud noises startle them. They remember attacks from enemies they cannot see. They are faster, more cautious, and more persistent.
Predators attack their own kind when they see them as competitors. Wolves answer each other's calls. Solitary hunters hold territory and sometimes turn on their own. Scavengers tidy the remains. Snakes swallow only what fits. The dead animals, stripped of caution, wander and consume without the faintest regard for self-preservation.
The world is hungrier now. Food is contested. Animals eat corpses to sustain themselves and heal. You will hunt. But so will everything else.
... and they no longer glow in the dark. The weird saran wrap effect is finally gone.

I think we can all agree that in 7 Days to Die, like in many other games, animals exist merely to be hunted and eaten by players, and blatantly so. In vanilla, there are two categories: the ones that flee from players, and the ones that attack players. The ones that flee from players will also flee from the ones that attack players, and most of the ones that attack players will also attack the ones that flee from players, but not all of them (looking at you, Grace). That's it. That's pretty much all there is to animal AI in this game.
Natural Selection changes that.
[]Animals now assess threats before deciding to fight or flee. They use a quantitative model of their own strength versus yours, factoring in their health, damage output, and the size of their group. A lone wolf will think twice before attacking a bear. A pack of wolves will coordinate and engage.[/]
[]They fear fire. Wielding a torch makes you seem more threatening to most animals. Attacking with fire can also scare them away sometimes.[/]
[]Loud noises startle them. Gunshots, explosions, and other loud sounds can cause animals to flee in panic. Startled animals stop fighting and run.[/]
