You can tell how many they have by the orbs floating above them! -When low on souls they can magically drain nearby enemies to regain health and souls, this however can be blocked with a shield. -They can shield allies with temporary runic shields that will negate all damage taken and push the attacker away. -When at a safe distance they'll launch any active souls at their enemies creating pillars of devastating soul fire that can shred through even the toughest of enemies.
