How to use: Sanity Overhaul replaces every NPC with the Sanity NPCs. There are custom waves too, so you can delete the overhaul folder if you only want Sanity waves to be affected.

Disarming (Grab an NPCs wrist and press trigger; they'll drop their weapon)

Mind-Freeze (Grab an NPC by the skull and press A/X, and they will be completely frozen. Press the trigger while holding their head to unfreeze).

Sometimes, random NPCs aren't replaced; I'm not sure what causes this.
You can still choke/snap after an NPC is dead.
