Why this mod?
Spelljack came from a concept I really wanted in BG3: a mage who can take an enemy's spell in the middle of a fight and use it against them. Rubick from Dota 2 was the main inspiration (maybe Ubel from Frieren to a much lesser extent because of her instinctive learning of other's magic). Sorcerer felt right because metamagic lets you do more than just steal a spell, it lets you twist it and cast it back in an even nastier way.
Subclass Features
Spell Steal
Level 1, Reaction
When an enemy creature casts a spell, you can use your reaction to steal it. The stolen spell remains available to you until you cast it or steal another one.
You can only steal spells of a level equal to or lower than your highest spell slot.
This is the heart of the subclass and your bread and butter. Some fights will give you little to work with, while others turn into a real battle of minds.
Arcane Intuition
Level 1, Passive
Add your Charisma modifier to Arcana checks.
Spelljack feels magic rather than studies it, and that instinct helps to understand magic better.
Absorb Magic
Level 2, Bonus Action, Once per Short Rest
Consume a stolen spell to gain Sorcery Points based on spell level:

This feature is available at level 2, when Sorcerers first gain Sorcery Points. As an additional bonus, absorbing a stolen spell also grants Arcane Acuity charges.
Extended Memory
Level 6, Passive
When you steal a spell with Spell Steal, you can cast it one more time before it fades.
This is where the subclass starts to open up. Stolen spells stop feeling like single-use trophies and start becoming real tools you can plan around for more than one turn.

Your stolen spells consume Sorcery Points eq
